Honey wines are deliciously aromatic by nature, but they are not like fruit wines. You might assume that because they are light in colour, that the right thing to do is to chill them like a white wine, but in fact this is exactly the wrong direction.
Just like a gourmet cheese, let our wines live at room temperature. They are shelf stable in the bottle at room temperature for years. When you open a bottle, pour it and let it breathe in the glass for a moment. Swirl it so that it can release as much of the aroma as possible, and then sip.
Because we add no stabilisers to our wines, they do not survive long once opened. Pour, enjoy, and let that be the moment.
